Broccoli Cornbread

I love this Cornbread.

I usually a double batch before we go
 camping and keep it in the fridge. 


It is wonderful with Chili and Brown Beans.


Here is what you will need

1 Box Jiffy corn muffin mix
2 eggs
1 cup small curd cottage cheese
1 small white onion (chopped fine)
1Pkg frozen broccoli
1 stick of butter or margarine

Mix well all together and pour in  greased 9 x 13 baking dish

Bake at 400 degrees for 35 to 40 minutes 
It should be lightly browned and a toothpick comes out clean.

For a double batch, double all except broccoli and use a larger pan.

I got so excited last time I made this 
I forgot to snap a picture.

So I took one of the left overs, ha!


So Good!!

Hungry Mother Campground Review

I love State of Virginia campgrounds.

They are always so clean!
They also take reservations, unlike State of Tennessee campgrounds. Roan Mountain would be my favorite TN campground, except you can't make reservations.
When you drive that distance and can't find a site, it is frustrating.

 We recently camped at 
Camp Burson, Hungry Mother State Park.




They offer large sites with full hook up.
 The sites are level with a picnic table and a very nice firepit.



The Park is full of hiking trails, lake swimming, canoes and paddle boats.
We only have one complaint. I am sure it is due to cut backs throughout the State, but there was not a Campground host, nor was the camp store open the whole week-end.

Even so, we still would give this campground our 
"Comfy Camping" Stamp of approval!

"But I Don't Own A Camper"


I have heard  this statement a lot and I completely understand.
 Our decision to purchase a camper was a big one.

I realize that not everyone has the opportunity or would want
to take on the commitment of owning a camper.

That is why I wanted to write this post.
 There was a time in our lives when we didn't own a camper and yet we still had a desire to go camping. 
We just had to find other ways to make our camping trips happen.


Years ago, before we had children, and before I was a spoiled "comfy camper",
 we bought a tent.

Let me just say, that is not my kind of camping.
 It did not work for me, but I have to list it as an viable option.
Especially now that the campgrounds have come so far in providing really nice bath houses, 
recreation areas and dish washing and laundry areas.


Second option, you can now Rent campers and RV's.

They are all over the internet with a million different options.
I would also check with your local camper retailer. 
We have never tried this route, but have friends that have and loved it for long trips.

The best option that worked great for us... Rent a Cabin!
Most State Parks and private campgrounds have cabins available for rent. One of our favorite places to rent a cabin is in Cosby TN right outside of Gatlinburg in  Jellystone Campground!
They have cabins right on a mountain stream.



Just know that you don't have to own a camper to enjoy the fun that is camping!

It is no secret that I am a blogaholic
I have a large list of blogs that I check on a regular basis.
(you can see my Blog Roll down the right side for a few of my favorites)

To keep from wasting time searching and
 typing, I created my own iGoogle account.
 I love iGoogle because it shows my
e-mail, blogs and even the weather all in one location.

For those who may not have an iGoogle account, 
I wanted to show you how it works and how you can set up your own! 

I found this video on YouTube that will walk you through it.
It is so easy.



The best part about  an iGoogle is that 
you can make it your home page.
 and you can make it pretty!

My whole point is... 
get an iGoogle and add my blog!!
